Four Ingredient Low Fodmap Carbonara

This low fodmap carbonara is a great addition to your low fodmap recipe book. It is also low in lactose, with the only dairy product being Parmigano Reggiano, a hard cheese, making this meal a perfect low lactose carbonara, due to it being generally well tolerated for those with food intolerances. This recipe is made from just four ingredients, most of which you will already have in your kitchen. This carbonara has a slight twist, it uses chorizo instead of pancetta. We love it, but if you are not a fan, swap it for some pancetta or even make it vegetarian with some roasted courgettes on top.

Preparation time: 5 minutes

Cooking time: 20 minutes

Ingredients

  • 3 large egg yolks
  • 80g chorizo
  • 150g gluten free spaghetti
  • 50g parmesan or pecorino cheese

Instructions

  • Boil the water for your pasta and add a good pinch of salt
  • Crack the eggs and put the yolks in a bowl
  • Grate your cheese of choice from those suggested, and add it to the egg yolks. Mix it in well
  • Add the chorizo to a pan and fry off for around three minutes (no need to add oil, the natural oils will come from the meat). Once cooked remove the chorizo from the pan but leave the oils in there.
  • Add the spaghetti to the boiling water and cook for around 12 minutes, or time suggested on the packaging
  • After the cooking time for the pasta is over, fill a mug with some of the pasta water (this is what makes it creamy)
  • Remove the pan from the heat (super important to stop your low fodmap carbonara from scrambing)
  • Add the egg and cheese mixture to the pan and stir quickly till all combined, the leftover heat of the pan will cook the egg
  • If it is too thick, add a little more pasta water
  • Add the chorizo and give it a stir till combined
  • Season with salt and pepper
  • And that’s it, your low fodmap carbonara is ready!
  • TOP TIP: Heat your plate or bowl before serving, carbonara cools quickly, so a warm plate will help keep the heat.
