Low Fodmap Carrot Fritters

Like a lot of our recipes, these low fodmap carrot fritters are versatile, you can different toppings or even add courgette to the fritters. We enjoyed these with a small amount of avocado, avocado in larger amounts is considered to be high in fodmap so we would recommend using 1/8 to 1/4 of avocado per serving.

Preparation time: 10 minutes

Cooking time: 10 minutes

Ingredients

  • One medium carrot
  • 100g ground almonds
  • 1 egg
  • 1/2 Avocado
  • 200g halloumi cheese

Instructions

  • Beat your egg into a small cup or jug.
  • Grate your carrot into a large mixing bowl.
  • Combine the grated carrot with the ground almonds and the beaten egg.
  • Split the mixture into two and roll into two balls, flatten them out to form a patty.
  • In a frying pan, heat a small amount of oil (we used coconut).
  • Cook each side of your carrot fritters until golden, usually around 3-4 minutes. Add the halloumi to the pan for the last few minutes.
  • Serve your carrot fritters with the cheese and avocado on top and enjoy!
