Risotto Primavera

Looking for a low fodmap risotto recipe? Look no further, this low fodmap risotto primavera will be a favourite! Don’t fancy using the same toppings? This recipe allows you to customize your own low fodmap risotto. This recipe typically serves four peoplem so it is the perfect family meal.

Preparation time: 10 minutes

Cooking time: 40 minutes

Ingredients

250g risotto rice

1 bunch of spring onions

4 slices of prosciutto

1 veg stock cube with 900ml of water

2 courgettes

40g parmesan

3 tbsp lactose free yogurt

1 lemon, juiced

Instructions

  • Preheat your oven to gas mark 6 or 200 degrees.
  • Thinly slice the spring onions and place with the rice and 800ml of water into an oven-proof baking dish.
  • Stir together and cover with tin foil. Place in the oven for 15 minutes.
  • Remove from the oven, add in the thinly sliced courgettes and bake for another 20 minutes until everything is tender.
  • Once cooked, stir in the yogurt, lemon juice, any seasoning (to taste) and stock if it is looking dry and bake for a further five minutes.

Sprinkle with the parmesan and sliced proscuitto to serve.
