Ingredients
- 250g risotto rice
- 6 spring onions (green part only)
- 4 slices of prosciutto
- Homemade stock with 900ml of water, Or buy Bays Kitchen Low-FODMAP stock
- 2 courgettes
- 40g parmesan
- 3 tbsp lactose-free yogurt
- 1 lemon, juiced
Instructions
- Preheat your oven to gas mark 6 or 200 degrees.
- Thinly slice the spring onions and place with the rice and 800ml of water into an oven-proof baking dish.
- Stir together and cover with tin foil. Place in the oven for 15 minutes.
- Remove from the oven, add in the thinly sliced courgettes and bake for another 20 minutes until everything is tender.
- Once cooked, stir in the yogurt, lemon juice, any seasoning (to taste) and stock if it is looking dry and bake for a further five minutes.
Sprinkle with the parmesan and sliced proscuitto to serve.
