Spicy Vodka Pasta Recipe

Ingredients

  • 200g low FODMAP pasta – gluten free versions are usually preferred
  • 2 tablespoons of vodka
  • 2 tablespoons of parmesan cheese
  • 1 tablespoon of butter
  • 50g of tomato paste
  • 100g of spring onion, finely chopped
  • 75g cream (lactose free if you prefer)
  • 1 teaspoon of chilli flakes
  • 1 tablespoon of garlic infused olive oil
  • Basil leaves to serve

Instructions

  • Cook the Pasta:
    • Bring a large saucepan of salted water to a boil.
    • Add the pasta and cook according to the packaging instructions until al dente.
    • Drain the pasta well and set aside.
  • Prepare the Sauce:
    • In a frying pan or skillet, heat the olive oil over medium heat.
    • Add the spring onions and tomato paste to the pan.
    • Sauté for about 90 seconds, stirring occasionally.
  • Add Cream and Flavorings:
    • Pour in the cream, add the chili (to taste), and vodka (if using).
    • Cook for an additional two minutes, allowing the flavors to meld together.
  • Finish the Sauce:
    • Add the butter to the pan and stir until it melts completely.
    • Sprinkle in the grated Parmesan cheese, stirring continuously until the cheese is melted and the sauce is smooth.
  • Combine Pasta and Sauce:
    • Add the cooked and drained pasta to the sauce in the frying pan.
    • Toss the pasta gently in the sauce until it is well coated.
  • Season and Serve:
    • Season the pasta with salt and pepper to taste.
    • Serve the pasta immediately, garnished with fresh basil leaves if desired.
